Right here in the Reliance, our chefs handmake all of our charcuterie, using traditional techniques & recipes that have been carefully researched, pondered & tested by us.
We use the best, locally sourced rare breed pork from our friends the farmers at Taste Tradition near Thirsk, North Yorkshire. We believe that the better the ingredients we put in, the tastier the charcuterie we get out.
Our charcuterie is air dried & cured here in our bespoke curing room in The Reliance's kitchen. After weeks and months of careful, gentle curing & drying, our salamis, coppas, lomos & hams are ready for you to enjoy.
